Hephais – Perseus Series KN-PE30-140

The Perseus Paring Knife is a 140mm stainless steel knife for peeling, trimming, and detail work — the tasks that are too small for a chef’s knife and need more control than a larger blade allows.

The 440C stainless steel blade has a stone-washed, hand-hammered finish and is sharpened to a 15° edge angle. The olive wood handle with black ebony spacer gives it the same look and feel as the rest of the Perseus range, with an octagonal profile for grip.
